Grilled Lemon & Herb Chicken Wings

3 lbs chicken wings

Marinade:

1.5 c lemon juice

1 Tbsp garlic, minced

1 Tbsp onion, minced

1/2 Tbsp garlic powder

1/2 Tbsp onion powder

2 tsp black pepper

Place the wings into a sealable plastic baggie. Mix all the marinade ingredients together and pour this into the same baggie with the chicken wings. Seal it up and place into the refrigerator and marinate for 3 to 4 hours.After the wings are thoroughly marinated, drain off the excess marinade and discard. Get your grill going. You’ll want a medium hot fire. Place the wings on the grill, turning every now and then so they don’t burn. The chicken should be done in about 8 to 10 minutes.

White Bean Chicken Chili

3/4 lb boneless skinless chicken breast, cubed

1/2 tsp salt and pepper

1 med onion, chopped

1 jalapeño pepper, seeded and chopped

2 tsp dried oregano

1 tsp ground cumin

2 Tbsp olive oil

4 garlic cloves, minced

2 15oz cans white kidney beans, rinsed/drained

3 c chicken broth

Cook chicken, onion, jalapeño with salt/pepper over medium until chicken is browned and vegetables are crisp. Add garlic and cook for 1 min longer. Transfer to a 3 qt slow cooker. In a small bowl, mash 1 c of beans; add 1/2 c broth and stir until blended. Add to the slow cooker with the remaining beans, broth, and spices. Cover and cook on low for 3-3.5 hours.

Ginger Fruit Salad

1 cantaloupe

1/2 med watermelon

1 lb strawberries

1/2 pint blueberries

1/2 pint blackberries

1/2 pineapple

3 tablespoon fresh ginger, grated

Mix well. Best served cold

Bacon Wrapped Dates

16oz package of bacon, thin cut, no additives
8oz package of pitted dates

Preheat oven to 350˚. Position oven rack in center of oven. Cover a cookie sheet with tin foil. Cut bacon into thirds. Wrap bacon around date, positioning the bacon seam downward toward the cookie sheet. Wrap all dates in the same way. Bake 20-25 until crisp.

Sweet Potato Fries

1 large sweet potato

1 Tbsp olive oil

1/2 tsp paprika

1/2 tsp garlic powder

1/2 tsp chili powder

1/2 tsp onion powder

Preheat oven to 450˚. Mix olive oil and spices together. Cut sweet potatoes into long strips. Place sweet potatoes on a baking sheet and coat with mixture. Bake for 45 min. For extra crispy, finish for a min or two on the broiler setting.
